Vanilla Cookies


They have been considered ‘Christopher’s Christmas Cookies’ ever since he was a boy. These cookies are what Chris and I decorated the first time we hung out together. Since we started dating they have become more than just a Christmas treat by popping up during Valentines day and now Easter.

I have never made these cookies and don’t think I ever will, not that I don’t want to but in our family, they are Chris’s special thing and I don’t want to take that away! Here ishis recipe with his notes! Enjoy!
Chris’ Christmas Hoilday Cookie Recipe:
1 3/4 cups sifted flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup sugar
1/2 cup butter or margarine
1 egg
2 T milk
1 tsp vanilla extract
(the following is the exact recipe, but I just stick everything into Lena’s mixer and let it do the work)
- mix the dry ingredients together
- using 2 knives or pastry blender, cut the butter into the flour mixture until consistency of coarse corn meal
- mix the egg, milk and vanilla
- form into a ball and refrigerate for a minimum of 2 hours
- preheat oven to 350
- lightly grease cookie sheets
- roll out dough until approximately 1/8 inch thick and cut into desired shapes
- the recipe says to bake for 7 mins, I normally do it for 5 1/2 or so because I like softer cookies. The edges should start to turn a light golden brown
Frosting:
1 lb powdered sugar
1/4 tsp salt
1/4 cup milk
1/3 cup or 2/3 stick of butter
- I normally cut the butter into the powder sugar, but then just let the mixer do the rest
- I will then separate the frosting into three bowls and use food coloring to make the frosting more enjoyable.
- decorate the cookies with whatever sprinkles and other goodies you would like!
*** Cooking warning from me (Lena), once you eat one, you usually cannot stop….
