Make Ahead Breakfast Sandwiches

My mom made these for us as a kid but of course it was not until I saw them floating around Pinterest that I remembered!

These have been incredibly handy for Chris to have at work for a mid day protein pick up rather than breakfast. Incredibly easy and quick for how many you can make at once!

What you will need (besides ingredients):

  • Preferably a large muffin pan but a regular sized pan can work as well
  • Wax paper
  • Masking tape
  • Sharpie
Ingredients: quantity depends on how many sandwiches you wish to assemble
  • eggs
  • English muffins
  • frozen sausage patties
  • cheese slices 

Directions: Grease your muffin tin, crack one egg in each well and sprinkle with desired seasonings. Bake at 350' for 25 minutes or until set.


While eggs are baking lay out muffins, cheese, and sausage.


The sausage patties I bought were smaller in diameter than I had hoped but they still worked!

When eggs are finished baking, remove from muffin tin and cool on a wire rack. Once eggs are cool place on English muffin. Stack sandwiches and wrap in a square piece of wax paper using masking tape to seal. Write date on wrapping before placing in the freezer in a Ziploc bag.




For reheating, if thawed place in microwave for about a minute. If still frozen cook in the microwave on defrost for 1 minute then cook for two, turning muffin over halfway through the two minutes. You may cook the sandwich in the wax paper, just remove the tape.
