Greek Salad Inspired Panini


I tasted my first Greek salad when living in Croatia over five years ago now. Since then I have loved the combination of flavors. Being it the hot summer time I wanted something new and something more light in tummy but tasty so I tried my hand at putting together my own kind of sandwich! 

Ingredients:
  • shredded cooked chicken breast
  • diced cucumber
  • diced tomato 
  • feta cheese 
  • Basil Pesto
  • 2 sandwich rolls or your liking
Directions: I used roughly 1/4 cup shredded chicken per sandwich and added cucumber, tomato and feta to my liking. Mix up chicken, cucumber, tomato and feta in a bowl, set aside. Spread a generous amount of Pesto on both sides of the bread then scoop chicken mixture onto the bottom piece of bread. Place the top piece of bread on top of the chicken mixture and then either toast in a panini grill or bake in an oven until bread looks slightly toasted and cheese has melted some. I used a toaster oven set at 250' for 15 minutes, this is not the same as a standard kitchen oven. Serve warm and enjoy! 






These were a huge hit in our household and a sandwich I will be making again!
