These have become my newest pregnancy craving. I have always enjoyed fresh green beans from time to time but I wouldn't have called them my favorite, until throwing this together while being in the second half of my pregnancy!
The slight crunch of the skins from the roasting and Parmesan with the hint of salt and pepper make these fabulously savory!
- 2 cups fresh green beans
- 1 Tablespoon olive oil (more to taste if desired)
- 1/4 teaspoon salt (more to taste if desired)
- 1/4 teaspoon pepper (more to taste if desired)
- 1 teaspoon garlic, minced
- Grated Parmesan cheese
Preheat the oven to 400'f. Place green beans in a large bowl and drizzle with olive oil. Sprinkle salt and pepper over beans and toss to coat. Mix in garlic. Place beans on a cookie sheet in a single layer, sprinkle with desired amount of Parmesan cheese. Bake for 20-25 minutes or until golden brown!
