Grandma Anna's Rice Pudding


Pregnancy has been a little unfriendly this last week. I'm just a couple weeks from the third trimester and now I'm have the joy of experiencing morning sickness and all the beauty that comes with it. I have not eaten much of anything this week for two reasons (1) smells/nausea (2) deathly afraid of the results of eating... 
I was talking to my mom this morning and she mentioned Rice Pudding and it instantly sounded like something appetizing (in small quantities of course...) So from the archives of my old blog I pulled up our family rice pudding recipe! 
Ingredients:
  • 1-1/2 cups cooked rice
  • 1/2 cup raisins
  • 3 eggs beaten
  • 2 cups milk
  • 1/3 cup sugar
  • 1 teaspoon grated lemon rind
  • 1/2 teaspoon ground cinnamon
  • 2 Tablespoons of butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • Additional milk, optional
Directions: Mix all ingredients and place in a greased dishes. 
Bake uncovered at 350° for 35 minutes, or until a knife inserted in the center comes out clean. Cool. If desired, pour milk over each serving. Refrigerate leftovers.
