Butterscotch Pudding Oatmeal Cookies
I love oatmeal cookies, mainly because they are so hard to mess up. I can never follow an oatmeal cookie recipe, because I always wind up throwing too much into them! And by too much I mean just enough! Goodness in every bite!
Ingredients:
1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
3 cups quick-cooked oats
1 1/2 cups flour
1 package (3.4oz) instant butterscotch pudding mix
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped nuts
1/2 cup shredded coconut
3/4 cup raisins
Directions: In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the oats, flour, dry pudding mix, baking soda and salt; gradually add to creamed mixture and mix well. Stir in chocolate chips, nuts, coconut, and raisins.
Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until lightly browned. Remove to wire racks.

Sounds SOOOOOOO delicious! My favorite cookie ever is oatmeal with butterscotch chips. YUM.

me too! I always see cookie recipes with vanilla pudding. I had butterscotch on hand so I wanted to give it a whirl! :) Thanks for the pin!
