Banana Bread {My FAVorite}

The other day I went to my recipe index here on Root & Blossom (because it's quicker than flipping through my recipe books and recipe box) to look up my banana bread recipe and I discovered that I have never posted it! How have I been making this recipe forever yet never bothered to post it?! It's my all time favorite! I hope you enjoy it!

1/2 C butter
2 C sugar
3 eggs
5 bananas (I use frozen then thawed)
3 C flour
3 tsp baking powder
1 C milk
1 tsp baking soda
1 tsp vanilla
Nuts (optional)

Banana's in picture are not banana's used

Thawed bananas. Liquid in bowl is just melted ice. 

Cream together butter and sugar then mix in bananas and eggs. Add 2 cups of flour and the rest of the dry ingredients. Mix in the remaining flour. Once completely mixed add wet ingredients. Finish with nuts if desired. Bake at 350' for one hour if in loaf pans (split batter equally between two pans) or 25 minutes if in muffin tins.


  1. I don't get the part with the bananas. You mix them in whole, without peeling them? And in what kind of juice are the bananas soaking in? I've never seen this kind of recipe so I had to ask! :)

  2. Sorry if that was misleading. I'll have to make a note in the recipe. When my banana's are getting too ripe in my fruit bowl I put them in the freezer. When I want to make banana bread I put five frozen banana's in a bowl in the morning to thaw. When they are thaw they are extremely mushy. When I peal them, the banana just slips out in to the mixing bowl! (So many 'whens' :) ) Does this clear things up?
